I am an agricultural biotechnologist currently working as a Rice Expert at the Rice Science Center, Kasetsart University, Thailand, under the expert supervision of Prof. Apichart Vanavichit. My research primarily focuses on the cooking and eating quality (CEQ) of traditional rice varieties and the development of functional instant rice-based foods. I investigate the effects of starch physicochemical properties on grain quality, particularly the genetic regulation of starch biosynthesis during grain filling. I am also interested in the molecular breeding of rice for improved CEQ and glycemic response through the enhancement of amylose content, resistant starch, and endosperm starch structure. Additionally, my research interests include plant-environment interactions, particularly the effects of abiotic stresses on grain quality and the application of nanotechnology to mitigate stress responses in crops under controlled environmental conditions.
